Maid of Honor

Last weekend, my sister got married!! It was such a beautiful wedding that took place at my grandmas beach house in Punaluu. There was so much anticipation and planning that took place before the wedding and I was blessed to take on the role of maid of honor. The whole week was filled with craziness as I planned for her bridal shower and the main event.

My sisters new hubby is mexican, so to incorporate his culture we did mexican food for the wedding. He is also gluten free because he has celiac's disease so everything we made for the wedding was ALL gluten free. I made all the cupcakes for the desserts and recruited some of my aunties which ended up being an all day job for us. It was my first time making gluten free cupcakes and it was not easy. We ended up doing five different batches of cupcakes before finally finding a good recipe that we could use. The first batch was made with water and it was very grainy. The second batch was made with milk which still tasted really grainy to me. Next we tried POG and then another batch with 7-Up, in which they both tasted a lot better but still not perfect. Finally, our last recipe and the one we stuck with for the rest of the 300 cupcakes we ended up making included a mixture of the POG and 7-Up. There was a lot of trial and error that went into it but they ended up tasting great and people really enjoyed them so I was happy with it.

The day of the wedding went very well and went all as planned. The ceremony didn't start til 4:30 so we had the whole day to prepare. As I was cooking and decorating I was mentally trying to prepare myself for the day, and most of all for my speech. I kept procrastinating from writing my speech and as it got closer, I started to stress more and more about it. I finally wrote one a couple hours before the ceremony started and stuck it in my dress for me to read later. When the time came for me to give my speech I was so nervous. My heart was beating fast and I was sweating because I am not good in front of crowds and am not a very good public speaker. But when it was finally over, I was able to relax and let loose, which is when the real fun started.
